We kindly ask you to prepare the needed ingredients and equipment as well as the advance preparation work before the class starts.
If you have anything not to be able to prepare, let us know in advance and we’ll be happy to suggest the substitute.
We use grams in our recipes.
Please prepare a Gram Scale if possible.

Ingredient (for 8 pieces )

wrapper dough

  • 270g All-purpose flour
    (protein content of 8 to 10%)

  • 27g  Sugar

  • 1 tsp Yeast

  • 1 tsp Baking powder

  • 140g Warm water

  • 2 tsp Vegetable oil

  • Starch
    (needed when you mold the dough)

fillings

  • 200g Onion

  • 30g Dried shiitake mushrooms

  • 12g Thin deep fried tofu

  • 2 pinche Salt

  • 1 Tbsp Shaoxing sake or white wine

  • 1 Tbsp Dark soy sauce

  • 2 tsp  Miso paste

  • 1 tsp Sugar

  • 1 Tbsp Sesame oil 

  • 1.5 Tbsp Vegetable oil

  • 4 Tbsp Starch

  • 1 dash White pepper powder

Equipment

kitchen tools

  • 2 Bowls

  • Rubber spatula

  • Measuring cup

  • Gram Scale

  • Teaspoon&Tablespoon

  • Plastic wrap

  • Wax paper

  • Steamer

  • Tea towel

Make sure to do the following preparation before class.

Weigh each ingredient

1) Weigh each ingredient such as all-purpose flour and sugar individually.
Using a scale is recommended if possible.

2)Warm 140g water up to body temperature.

3) Presoak dried shiitake mushrooms in a bowl of water until they become soft, and cut finely, then squeeze them.

4) Chop the onion.

5) Chop thin deep fried tofu finely.

General steps

  • Make dough for wrappers
  • Make the filling
  • Make pork buns
  • Steam them
