We kindly ask you to prepare the following ingredients and equipment.
If you have anything not to be able to prepare, let us know in advance and we´ll be happy to suggest the substitute.
We use grams in our recipes.
Please prepare a Scale as possible as you can.
Ingredient (for 8 pieces )
270g All-purpose flour (protein content of 8 to 10% )
27g/ 3 Tbsp Sugar
1/2 tsp Yeast
1/2 tsp Baking powder
70g / 2.5oz (1/4cup+1Tbsp) Water
90g / 3.2oz (1/4cup+2Tbsp) Milk
2 tsp Lard or vegetable oil
Starch (needed when you roll out the dough )
200g/ 7oz Ground pork
200g/ 7oz Onion
1 pinche Salt
2 tsp Chicken soup powder
1 Tbsp Shaoxing sake or white wine
1 Tbsp Dark soy sauce
1 Tbsp Oyster sauce
1 Tbsp Sesame oil
3/4 Tbsp Lard or vegetable oil
2 Tbsp Starch
1 dash White pepper powder
Bowl, Rubber spatula, Measuring cup, Teaspoon, Tablespoon, Scale, Wax paper, Steamer, Tea towel
Make sure to prepare the following each ingredients before class.
1) Weigh each ingredient such as all-purpose flour and sugar individually.
Using a scale is recommended if possible.
2) Mix water of 70ml and milk of 90ml in the same cup and warm to the same temperature as body temperature.
3) Chop the onion into fine.
