Preparation for Japanese steamed veggie buns making

We kindly ask you to prepare the following ingredients and equipment.
If you have anything not to be able to prepare, let us know in advance and we´ll be happy to suggest the substitute.
We use grams in our recipes.
Please prepare a Scale as possible as you can.

Ingredient (for 8 pieces )

Wrapper dough
270g     All-purpose flour (protein content of 8 to 10% ) 
27g(3 Tbsp) Sugar
1 tsp     Yeast
1 tsp     Baking powder
140g   Warm Water
2 tsp     Vegetable oil

Starch (needed when you roll out the dough )

30g   Dried shiitake mushrooms
12g Thin deep-fried tofu
200g   Onion
1 pinche Salt
1 Tbsp White wine
1 Tbsp Dark soy sauce
2 tsp Miso paste
1 tsp Sugar
1 Tbsp Sesame oil
1.5 Tbsp Vegetable oil
4 Tbsp Starch
1 dash White pepper powder


Bowl, Rubber spatula, Measuring cup, Teaspoon, Tablespoon, Scale, Wax paper, Steamer, Tea towel

Make sure to prepare the following ingredients before class.

1) Soak dried shiitake mushrooms in a bowl of just enough water to cover them, and chop them finely when they become soft.(10 minutes are needed at least until they become soft)
2) Chop thin deep-fried tofu finely.
3) Chop the onion.
4) Weigh all-purpose flour.
Using a scale is recommended if possible.
5) Warm 140g water up to body temperature.
